Palappam is a fluffy yet crispy (crispy by the edges and fluffy in the center) pancake in Kerala cuisine. It is prepared by cooking specially prepared palappam batter in an appam (or any small) pan (which gives a unique shape). The batter is made by ground rice and coconut, wihch is then fermented (by adding yeast, coconut milk). A very famous breakfast in Kerala and Tamil Nadu, Appam goes well with egg roast, kadala curry or milk+sugar.
