Vermicelli, also known as Semiya (in Tamil/Malayalam), Sevaiyyan (Hindi), Shemai (Bengali) is popular in several parts of India and is most commonly used for preparing a kheer (payasam) like dessert (by boiling it in milk and adding sugar, cardamom, roastred cashewnut and raisins), Vermicelli is based on wheat flour. It is then roasted for crispiness.  It can also be used to make vermicelli upma (or semiya uppuma).
